Borowski, Editha (Edith) Sakay Marallag, 52, of Galloway, NJ passed away June 23, 2020, following a brief, but valiant fight against all odds. Born in Solana, Cagayan Valley, Philippines, she lived, was educated, and worked for many years in Manila and surrounding areas before relocating to Juneau, Alaska in 2008, then Honolulu, HI before Egg Harbor Township, NJ, ultimately winding up in Galloway in 2018. She was very happy to become a proud United States Citizen in 2013. An avid gardener, Edith truly enjoyed tending to her vegetables, fruit, herbs, and flowers. She was immensely proud of her ability to grow cucumbers, beans, strawberries, and tomatoes, making pickles and smoothies with her often hard fought for bounty. While in the Philippines she had a gift for cultivating beautiful orchids, and once owned and operated a small mango orchard. Later in life Edith discovered a passion for fitness, becoming a Kickboxing instructor. Tough, tenacious, and no-nonsense, she was also caring, inspirational, and encouraging for all of her students. As a karate instructor she absolutely adored all of her students, but none more than the Tiny Tigers and Little Dragons. With perfection as the ultimate goal, she lovingly demanded each student perform better than last time, to overcome limitations real and imagined, to achieve and succeed. A private individual, Edith was the quiet one. She was a caring mother to Eric, Camon, and Ethan, and a loving wife to Brian, always giving her all. She will be fondly remembered and sadly missed. Edith is predeceased by her mother, Clarita Sakay. She is survived by her father, Elisio Tong Marallag Sr; brother, Elisio Sakay Marallag Jr.; son, Eric J. Beltran of Philippines; her husband, Brian Borowski; and their son’s, Camon and Ethan, of Galloway. She is also survived by many aunties, uncles, cousins, friends, karate and kickboxing students. A funeral mass will be held at Our Lady of Perpetual Help, Church of The Assumption, 146 S. Pitney Rd., Galloway, beginning at 3:30 PM on Friday, July 10, 2020. As of print, the service is limited to invitation only. If government restrictions are lifted the service will be open to the public. A face covering is mandatory. An outdoor reception and celebration of life will occur at 626 S. New York Rd, Galloway from around 5:30 PM until about 8:30 PM. The reception is open to everyone.
